In 1895, Grand Forks was the home of the North Dakota Milling Co. Looking for ways to supplement the sales of their high-grade flour, they discovered the product now known as Cream of Wheat. The first packages were cut by hand from cardboard. Company official Emery Mapes paid $5 to take a photograph of a smiling waiter to use on the labels. The photo has accompanied the Cream of Wheat product line ever since.
